Marble Cake and a Cup of Kaphi
Do you know what makes the perfect pairing? A nice slice (or two) of marble cake and a cup of kaphi (Indian filter coffee). If, like me, you've been making the most of the early spring sunshine and getting out in the garden to do a bit of cleaning up and spring planting, then you definitely deserve a break!
Here's an easy recipe for to make the perfect marble cake.
Ingredients
225g softened butter (I add 200g of butter and then top up the rest with a bit of ghee)
200g caster sugar (the original recipe calls for 225g, but I always reduce the amount because I don't like super sweet cakes)
3 eggs (or weigh in shells so that they are around 200-225g)
A pinch of salt
225g self raising flour
2-3 tbs milk (you need the mixture to be a dollopy kind of consistency
1 tsp vanilla extract (I use half a capful)
2 tbsp cocoa powder (use a good quality one - 70% ish is great)
Method
Heat oven to 180C/fan 160C/gas 4. Line a loaf tin with greaseproof paper.
Beat the caster sugar and butter until nice and fluffy.
Beat the eggs and add a pinch of salt. Add to the mixture and incorporate well.
If you are feeling in the mood (I never do), sift the flour and add it.
Keep mixing and add the vanilla extract.
Slowly add some milk until the mix is a little loose and can dollop off the spoon.
Transfer half into another bowl and mix in the cocoa powder.
Then, transfer a bit of one into the cake tin, then a bit of the cocoa-y one and so on until full. This way, you get the marble effect when it's baked.
Bake in the oven for 45-55 mins and check with a skewer to see that it's done and the skewer comes out clean.
